sometimes called the petit shoulder tender, this is a small, incredibly tender cut of beef rarely used because of the great skill required on the part of the butcher.  we give this little gem a chimayo rub & (suggested) a very rare pass over the flames & serve it up argentina-style with chimichurri 9
